by: Michael ZennerPosted on: February 8, 2024February 15, 2024 DINNER / ITALIAN / VEGETARIAN Roasted Garlic Asiago Fettuccine Instructions Roasted Garlic Preheat oven to 400 degrees. Cut off tips from garlic cloves still on the bulb (leave skin on). Place them cut side up in a cupcake pan. Drizzle some olive oil on the garlic bulb. Wrap it in aluminum foil. Bake garlic for 40-45 minutes, depending on the size of the bulb. Remove from the oven and let cool. Pasta Cook the pasta in a pot of boiling water until al dente. Drain and set aside. Sauce In the same pot you used to cook the pasta, heat some olive oil on medium heat. Add the onions and saute until golden. Take the roasted garlic from the skin and add to the pot. Add the cream and heat up. Add the grated asiago cheese and stir until melted. Add salt and pepper to taste. Mix in the cooked pasta. Garnish with parsley, if desired and serve. Ingredients Roasted Garlic 1 or 2 bulbs of garlic (2 if they are small) olive oil Pasta 1 lb fettuccine Sauce 1/2 small Vidalia onion 2 cup heavy whipping cream 1 1/2 cup Asiago cheese, grated salt pepper parsley, to garnish
