by: Michael ZennerPosted on: February 5, 2024 DINNER / AMERICAN / PORK Bacon and Leek Pasta Instructions Pasta Boil a pot of water and cook the pasta until al dente Drain the pasta reserving about a cup of pasta water Sauce Thoroughly wash the leeks Thinly slice them discarding the green tops Cut up the bacon into small pieces Cook the bacon in a large skillet or wok until cripsy Transfer the bacon to a plate with a paper towel on it On medium heat in the same skillet, cook the leeks for about 3-4 minutes, or until softened Add the garlic and cook for about 1 minute Add in the broth and cook for a few minutes until the liquid is reduced by half (and scrape up any browned bits from the bottom of the pan). Add 1/4 cup of the reserved pasta water along with the parmesan and bacon Add in the pasta and mix until cheese is melted Add in more reserved pasta water until sauce reaches desired creaminess Add pepper to taste Ingredients Pasta 1 lb thin spaghetti Sauce 2 small to medium leeks, thinly sliced 1 lb bacon 2 cloves garlic, minced 1/2 cup chicken broth 1/2 cup grated parmesan cheese pepper, to taste
