Instructions Chicken Salad Boil the chicken in water until it has an internal temperature of 160 degrees Once cooked, put in the fridge to cool Once the chicken is cooled, shred it up Add the shredded chicken to a large mixing bowl Add in the cooked bacon Add in the corn Add in the chives Add in the dill Mix to combine Dressing Combine all dressing ingredients into a small mixing bowl Stir into the chicken mixture bowl Combining everything Cube up an avocado (only the desired amount to prevent browning) Slice up the hard boiled egg (optional) Scoop some chicken onto a plate or onto a slice of bread (if making a sandwich) Add the avocado and hard boiled egg Ingredients Chicken Salad 1 lb chicken breast 2 large avocados 1 cup corn, cooked 1 lb bacon, cooked and shredded 1/4 cup chives 2 tbsp dried dill hard boiled eggs (optional) Dressing 3 tbsp lemon juice 3 tbsp olive oil 1 tsp sea salt 1/8 tsp black pepper
