by: Michael ZennerPosted on: August 10, 2025August 10, 2025 SALAD / AMERICAN / VEGETARIAN Creamy Roasted Beet Salad with Sweet Potato & Feta Keep Screen Awake Instructions Beets Scrub the beets clean Put in a steamer for about 30 minutes or until tender all the way through Once the beets are cool enough to handle, rub the skins off and cut into small bite size pieces. Sweet Potatoes Preheat the oven to 400 degrees Peel the sweet potatoes and cut into bite sized cubes drizzle with olive oil and season with salt and pepper Roast on a baking sheet for 30-35 minutes until tender Dressing Combine all ingredients into a deep cup Use an immersion blender to chop and mix together Add more of various ingredients (like dijon) to taste Salad Spread arugula on a plate Top with beets and sweet potatoes Add remaining ingredients Top with salad dressing Ingredients Beets and Sweet Potatoes 2-3 small to medium beets 2 sweet potatoes olive oil salt pepper Dressing 1/2 cup greek yogurt 2 tbsp mayonnaise 1 tbsp honey 1 tbsp lemon juice 1 tsp dijon 1 garlic clove salt pepper Salad feta cheese, crumbled arugula walnuts or pecans avocados
