by: Michael ZennerPosted on: September 25, 2024 DINNER / AMERICAN / CHICKEN Creamy Chicken Pesto Meatballs Instructions Meatballs Preheat the oven to 350 degrees Add all meatball ingredients to a large mixing bowl and combine Form into meatballs and put on a cookie sheet Bake for about 10-15 minutes or until meatballs reach internal temperature of 160 degree. Flip the meatballs halfway through so they can brown on both sides Pasta Bring a pot of water to a boil Cook the pasta until al dente, drain and set aside Sauce Heat butter and olive oil in a skillet Add the garlic and cook for 1-2 minutes Add the sour cream and whisk to combine. Add chicken stock, cornstarch, basil pesto, lemon juice, salt and pepper Bring to a simmer and cook until smooth Serve over pasta with the meatballs Ingredients Meatballs 1 lb ground chicken 1/2 cup grated parmesan cheese 2 tbsp basil pesto 1 egg 1/2 cup breadcrumbs 1 clove garlic, minced 1 tsp salt 1/2 tsp pepper Pasta 1 lb spaghetti Sauce 1 tsp butter 1 tsp olive oil 2 cloves garlic, minced 1/2 tbsp basil pesto 2/3 cup sour cream 1 1/4 cup chicken broth 1 tsp cornstarch 1 tsp lemon juice
