The flavor and recipe is quintessentially Spain! Instructions Heat stockpot on medium heat with 2 Tablespoons olive oil. After 2 minutes, add onion, bell pepper, and garlic. When vegetables are lightly sauteed (about 5 minutes), add paprika. Stir in completely. Add tomato sauce, and raise heat to medium high and simmer. Measure out 1 cup of uncooked brown lentils and rinse under cold running water. Once tomato sauce is thick (about 3 minutes), add the rinsed lentils, potatoes, carrot, broth, black pepper and bay leaf. Bring to a boil. Place a lid on the pan and lower heat to low. Simmer for 30-35 minutes or until lentils are fully cooked. Remove lid, add salt and simmer for 1-2 more minutes. Remove bay leaf. Enjoy! Ingredients 2 tbsp extra virgin olive oil 1/2 onion, finely chopped 1/2 bell pepper, finely chopped (red or green) 4 cloves garlic, roughly minced 1 tsp smoked Spanish paprika 1/2 cup tomato sauce 1 cup uncooked brown lentils 2 small potatoes, peeled and cut into 1/2 inch pieces 1 carrot, thinly sliced 5 cup vegetable (or chicken) broth 1 bay leaf pinch sea salt dash black pepper
